3 Fall Recipes from your Fort Bend Apartments

When you live in luxury apartments in Richmond, the fall never feels like the fall. If you moved here from up north or out east, we’d like to remind you that there’s no reason to expect a chill in the air. You won’t spend any crisp October mornings wearing a jacket at the apple orchard, nor will you wipe frost off a pumpkin before putting on your winter boots to put it outside before Halloween. Those classic fall/winter moments just don’t exist down here.


Those moments might not happen, but we have our own fall moments down here at our Fort Bend apartments. You won’t need a jacket, but you will need a swimsuit. You won’t have to rub your hands together to stay warm, but you will have to bring a personal fan down to the pool to stay cool. While the rest of the country trudges through the snow, you could head down to Galveston and trudge through the sand. It’s a tradeoff, but it’s one we’re completely willing to make.


There’s nothing quite like fall, whether it’s warm or cold. Everyone can get excited about football being back, and we can all agree that we’re glad the worst heat of the summer is behind us. In honor of fall, we’d like to talk about some fall dinner recipes. This week’s blog post features some our favorite recipes that only work in the fall. During the summer months, you probably stuck to lighter meals. It’s fall now, so you can expand your recipe repertoire to include some heavier meals.

Pumpkin Risotto


We know we told you that you wouldn’t be dusting frost off your pumpkins this fall, but you can use pumpkins in the warm weather, too. This hearty pumpkin risotto uses some classic fall ingredients like dried cranberries, nutmeg and thyme to create a delicious dish.


Here’s what you’ll need:


  • Vegetable Stock

  • Pumpkin Puree

  • Shallot

  • Thyme

  • Rice

  • White Wine Vinegar

  • Parmesan

  • Parsley

  • Nutmeg

  • Goat Cheese

  • Dried Cranberries


Spaghetti Squash Lasagna Melt


Not only is this dish beautiful, it’s an easy twist on the traditional lasagna dish. Squash is one of those ingredients that people forget about during the warm summer months. Re-discover spaghetti squash by creating this gorgeous stuffed squash lasagna dish.


Here’s what you’ll need:


  • Spaghetti Squash

  • Cottage Cheese

  • Romano Cheese

  • Salt & Pepper

  • Broccoli Florets

  • Marinara Sauce

  • Grated Mozzarella


Lentil & Beef Chili


Everyone in Houston and the surrounding area can agree that nothing hits the spot like a well-made beef dish. Chili is definitely not a summer dish, but if the weather dips below 80 degrees this fall, you should definitely make this dish. If you’re ready to experience the joy of homemade chili, check out this recipe. Don’t forget to add the dollop of sour cream and top the dish with shredded cheese!

  • Chili Powder
